When the coffee cherries ripened to a deep, bright red, they would carefully pick them from the trees and spread them out on gunny sacks under the warm Kenyan sun. Day after day, the cherries dried naturally until they were ready for the next stage.
Once dry, they would use a mortar and pestle to gently pound the dried cherries, breaking away the hard outer parchment. The lighter husks would then be tossed into the air and carried away by the wind through a process known as winnowing, leaving behind the precious green coffee beans.
The beans were then roasted slowly in a simple sufuria over a charcoal fire. There were no timers or temperature gauges, only experience, careful observation, and the unmistakable aroma that filled the home as the beans turned from green to a rich brown.
After roasting, the beans were returned to the mortar and pestle and ground by hand into a coarse powder.
Meanwhile, water boiled over the fire.
The freshly ground coffee was added directly into the boiling water and allowed to steep before being served.
No paper filters.
No capsules.
No electricity.

How to Brew Great Coffee at Home

What You'll Need
Freshly roasted Mbogo Coffee
- Clean, filtered water
- A kettle
- Your preferred brewing method
- A mug, preferably your favourite one
Step 1: Start with Fresh Coffee
Great coffee begins with quality beans. Freshly roasted coffee preserves the aromas and flavours that make each cup memorable. Whenever possible, buy coffee in whole beans and grind only what you need.
Step 2: Heat Your Water
Bring fresh water to just below boiling. Water that is too hot can make coffee taste bitter, while cooler water may not extract enough flavour.
Step 3: Measure Your Coffee
A good starting point is about one to two tablespoons of ground coffee for every 180 to 200 ml of water.
Adjust according to your preferred strength.
Step 4: Brew

Good coffee shouldn't be rushed.
