Coffee Tasting

Discover the Flavours Behind Every Cup

Coffee is more than a morning ritual. Like fine wine or specialty tea, it offers a wide range of flavours, aromas, and textures waiting to be discovered. Coffee tasting, often called cupping, is the practice of evaluating these characteristics to better understand a coffee's quality, origin, and unique personality.

At first glance, two cups of coffee may look identical. Yet one might remind you of blackcurrants and citrus, while another carries notes of chocolate, caramel, or stone fruit. Learning how to taste coffee transforms an everyday drink into a sensory experience.

What Is Coffee Tasting?

Coffee tasting is the process of assessing a coffee's aroma, flavour, acidity, body, sweetness, and aftertaste. It is used by farmers, roasters, exporters, buyers, and baristas to evaluate coffee quality and consistency.

Professional cupping follows internationally recognized protocols, but you don't need to be an expert to appreciate the differences between coffees. With a little practice, anyone can develop their palate.

What Should You Look For?

Aroma

Before taking your first sip, smell the coffee.

Aroma offers the first impression of what's in the cup. You may notice floral, fruity, nutty, chocolatey, or spice-like scents. Much of what we perceive as flavour actually comes from aroma.

Acidity

In coffee, acidity is a positive characteristic. It refers to brightness and liveliness rather than sourness.

Kenyan coffees are celebrated for their vibrant acidity, which often creates a refreshing and crisp cup.

Sweetness

High-quality coffee naturally contains sweetness. Depending on the origin and roast, you may detect notes resembling brown sugar, honey, caramel, or ripe fruit.

Sweetness balances acidity and contributes to a more enjoyable cup.

Body

Body describes the weight or texture of coffee on your palate.

Some coffees feel light and tea-like, while others are rich, creamy, or syrupy.

Flavour

Flavour combines everything you experience while drinking coffee.

You might recognize notes of berries, citrus, cocoa, roasted nuts, tropical fruits, or even subtle floral characteristics. These flavours are naturally developed during cultivation, processing, and roasting. They are not added ingredients.

Aftertaste

A great coffee leaves a pleasant finish that lingers after the last sip.

The aftertaste may be clean, sweet, fruity, or chocolatey, encouraging another sip.

Why Does Kenyan Coffee Taste Different?

Kenya's unique growing conditions contribute to some of the world's most distinctive coffees.

High altitudes, fertile volcanic soils, carefully selected Arabica varieties, and meticulous washed processing combine to produce coffees known for their bright acidity, full body, and complex fruit-forward flavours.

It's one of the reasons Kenyan coffee continues to be highly sought after by specialty buyers around the world.

Tips for Better Coffee Tasting at Home

You don't need expensive equipment to enjoy a tasting session.

Try these simple steps:

Brew coffee using freshly roasted beans.

  • Grind your coffee just before brewing.
  • Taste the coffee without sugar or milk first.
  • Allow it to cool slightly, as more flavours become noticeable as coffee loses a little heat.
  • Compare two different coffees side by side.
  • Write down the flavours, aromas, and textures you notice.
  • There are no right or wrong answers. Coffee tasting is personal, and everyone's palate develops over time.

Coffee Tasting Is About Discovery

Coffee tasting isn't about finding the "perfect" cup. It's about understanding what makes each coffee unique.

One person may enjoy bright, citrus-forward coffees, while another prefers chocolatey, full-bodied profiles. Exploring different origins, processing methods, and roast levels helps you discover what you enjoy most.

Every cup tells a story of where it was grown, how it was processed, and the people who produced it.
