Ripe cherries are handpicked at peak maturity and pulped on the day of harvest. The coffee is then fermented in clean tanks for a carefully controlled period to break down the remaining mucilage, before being thoroughly washed with fresh water. Drying takes place slowly on raised beds until optimal moisture is reached, preserving clarity and structure. This process produces a clean, precise cup that clearly reflects origin and variety.
